The three chefs and the elBulli pedigree
Oriol Castro, Eduard Xatruch and Mateu Casañas met in the kitchens of elBulli in 2003, working under Ferran Adrià. All three rose to head the restaurant’s R&D department — the legendary ‘taller’ that produced most of elBulli’s late-period innovations. When elBulli closed in 2011, the trio opened Compartir in Cadaqués (2012), then Disfrutar in Barcelona (2014). The Michelin stars came in sequence; the World’s 50 Best #1 spot arrived in 2024.
The format
Two tasting menus — the ‘classic’ (around 30 courses) and the ‘festival’ (around 35) — with no à la carte. The kitchen runs as a creative workshop: a portion of the menu is what the team has cooked for years, the rest is what is being developed in the back kitchen this month. Service is theatrical without being pompous; dishes are explained, sometimes assembled at the table, sometimes intentionally surprising in form.
What to expect on the menu
The dishes change but the moves stay: spherifications, hot-cold plays, multi-step single courses that arrive in three parts. Long-running signatures include the multi-spherical pesto with smoked eel and pistachios, the panchino filled with caviar (a cream-puff sphere of cured-fish flavour), and the ‘macaroni carbonara’ that is not pasta. The dessert sequence runs to seven or eight courses on its own.
Honest verdict and how to get in
This is not a restaurant for diners suspicious of avant-garde cooking — the menu is a 30-course argument that food can do more things than most diners think it can.
