The reliable counter on the Old Town’s main street

Pintxo crawls in San Sebastián’s Old Town are walked, not sat. Bars are visited for one or two pintxos and a single glass; the goal is to see five or six counters in an evening. Gandarias is the counter most pintxo crawls start with, and the reason is simple: the food is excellent, the bar is always full, and the staff move fast enough that the energy never drops. The room behind the bar serves a sit-down menu, but the action is at the counter at the front.

What to order

The solomillo pintxo — a square of grilled beef tenderloin on a slice of toast, finished with a small dollop of garlic — is the one Gandarias is known for, and it is justified. Beyond that: the carrillera (braised cheek), the bacalao al pil pil on a smaller bread, and the pintxo de jamón ibérico if you want something cold. Wash everything down with txakoli or a glass of Rioja crianza.

How to use the bar

Walk in. Order a glass of wine and a pintxo from the chalkboard or by pointing at the counter. Eat standing. Pay on your way out — the bartender keeps the count. Most diners stay 20 minutes. Then you walk down the street to the next bar.

Honest verdict

Not the most experimental pintxo bar in San Sebastián, and not trying to be. It is the bar that does the classics — solomillo, carrillera, jamón — at a high standard, every night, for a counter that never empties. That consistency is the reason it has stayed essential for three decades.
